Truffles

The chocolate truffle was reputedly created by accident in the kitchens of French culinary giant Escoffier, when an apprentice pastry chef mistakenly poured hot cream over a bowl of chocolate. The resulting ganache balls, once rolled in cocoa to stop them sticking, were named after the famous Périgord black truffles which they resembled. With the thick cream softening the chocolate but letting its richness linger on the palate, truffles were soon extremely popular. Our chocolatiers create many variations of these smooth, gently melting delicacies, coating them in different ingredients, from chopped nuts to crushed biscuits.
